Tacos Hopefully
Being a South African I've always wondered what tacos where like, and that is not to say that restaurants don't make them. This wonder came to be due to the price point!!
So now with recipes being more accessible, I've tried my own take on these recipes and not, without doubt, have hoped for the best.
Now the following recipes have been adapted from other recipes but I've changed them to my liking
Ingredients
Tortillas
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 3/4 cup water
- 3 tablespoons olive oil
NB: Now a brief point is that I used a tortilla recipe for the taco shells because I had read online that they are easily interchangeable.

- In a large bowl, combine flour and salt. Stir in water and oil. Turn onto a floured surface; knead 10-12 times, adding a little flour or water if needed to achieve a smooth dough. Let rest for 10 minutes.
- Divide dough into eight portions. On a lightly floured surface, roll each portion into a 7-in. circle.
- In a large sheet pan coated with cooking spray, cook tortillas in a 230° degree oven until lightly browned. Keep warm.
Taco Filling
- 3.5 (1.6kg) pounds beef stirfry
- 1 large onion
- 1 yellow and 1 red capsicum
- 2 Avocados
- 2 Corn on the cob
- ½ lime juice
- 2 Tbspn homemade chilli sauce (optional)
- small head of lettuce, shredded
- 4 medium tomatoes, chopped
- 1 cup shredded Cheddar cheese
Start by preparing the onion and peppers, cutting them into strips
In a pot boil the corn, until cooked. Once cooked cut the corn kernels from the cob. Place in a bowl and season with a bit of cajun.
In a pan with some oil, start by frying the beef stirfry with preferred seasonings and, draining juices if necessary. Adding the onion and peppers once the meat is halfway cooked.
In a bowl, mash the avos and mix them with the lime juice. Season to taste with some salt and peppers.
Once cooked, assemble the tacos and enjoy!!
