Jam Tart

Ingredients
- 3 cups of flour
- 3/4 cup granulated sugar
- 1/2 teaspoon baking powder
- 3/4 cup butter cut into cubes
- 3 large eggs
- 5 tbs jam or preserves
- Pinch of salt
Method
- Preheat oven to 180°
- Grease your baking tray or pan, this tart can be baked in a tart pan but it can also be baked in a sheet pan and then cut into squares after baking.
- In a food processor, blend together the flour, sugar, baking powder, salt and butter until dough is crumbly. Add the eggs and blend until just combined. OR In a large bowl add the flour, sugar, baking powder and salt, stir to combine, add the cubes of butter and use your hands to work the butter into the dry ingredients, do so by rubbing the flour mixture and the butter together. Once the butter and flour mixture reaches a crumbly consistency add in the eggs and combine until the dough just comes together.
- Press the dough into the prepared pan making sure to leave enough dough to be used for the topping.
- Spread the jam over the dough leaving a 1/2-in. border around the edge.
- Crumble the remaining dough over the jam to form a topping for your tart.
- Bake until lightly browned and the jam is bubbling about 40 mins. Let the tart cool for about 15 mins before removing from pan.
- Optional, dust your tart with powdered sugar before serving.
